  • Ingredients:

2 teaspoons olive oil
1/4 cup diced red onion
1 cup cooked quinoa
1 cup cooked brown lentils, drained
4 ounces green chilies
1/3 cup oatmeal
1/4 cup whole wheat flour
2 teaspoons cornstarch
1/4 cup whole wheat bread crumbs or whole grain bread crumbs
1/4 teaspoon garlic powder
2 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste.

To prepare the honey mustard:

2 tablespoons mustard
3 teaspoons honey

Instructions:

Sauté the onion in 2 teaspoons of olive oil until tender, about 4 minutes or so.

Prepare honey mustard by combining ingredients and refrigerating until ready to use.

Combine all burger ingredients in a large mixing bowl.

Prepare 4 hamburger-shaped slices. In a large skillet, over medium heat add 1 tablespoon of olive oil, then with the oil heat the slices and leave them on the heat until golden brown on both sides, approximately 8-10 minutes.
